We are a sake brewery which strives to harmonize with the nature of Shinshu (Nagano) region.
All of our brewing rice is contract grown in the local Ina Valley, and we only brew pure rice sake that is rich in flavor, rooted in the climate and culture of Shinshu as a "locally rooted sake brewery".
The name "Shinano Nishiki" represents our desire to express the beauty of the great nature in Nagano, which is known as Shinano, through our sake-making.
Shinano refers to Nagano Prefecture, and Nishiki means beautiful nature.
By brewing sake, we aim to capture the essence of Nagano's nature and showcase it to the world.
By using local rice, we can bring out the taste that matches the climate and soil of the region, resulting in a deeper and more satisfying flavor.
Through contract cultivation, we build long-term relationships of trust with local producers and contribute to the development of the region.
We are committed to producing pure rice sake only that fully expresses the unique flavors of our locally grown rice, which is contract farmed without the use of pesticides or with reduced pesticide use, in order to be in harmony with the nature of Shinshu.
As a "locally rooted sake brewery" that is supported by the local community, we will continue to protect the sake culture of Shinshu.
In order to fully appreciate the distinct characteristics of the carefully cultivated rice, we especially use a low-polishing rate, and strive to create pure rice sake that showcases the five flavors of Japanese sake: sweetness, acidity, dryness, bitterness and astringency.
As a "locally rooted brewery", we aim to embody the essence of Shinshu's terroir in our sake, using only locally grown rice for our brewing.
In product development, we focus on the entire lifecycle of our products, including sourcing materials, brewing sake, and considering the effective use of resources such as energy.
We also take into account the reuse of by-products such as the sake lees, which we recycle as fertilizer for the contracted rice fields.
We are committed to effective use of resources until the transportation of the products and reuse of bottles, ensuring that we minimize waste and contribute to sustainability efforts.
